When doubling a pie recipe, how do I adjust the baking time?

I have a recipe for a pie and I want to make two of them. The pie is suppossed to bake for 55 minutes at 350 F. If you combine the two pies into one enormous pie you may need more help than i can offer.When doubling a pie recipe, how do I adjust the baking time?(more)When doubling a pie recipe, how do I adjust the baking time?There is no time or temperature changer that you need to make unless you have to split the two pies onto two different levels in the oven and then it is more or less a matter of rotating the pies from one level to the other half way through the cooking process. If they are on the same level then there is no change to the time and temperature of any marked degree. Just watch them and pull them out of the oven when the crust turns a nice golden brown. This also depends on the type of pie you are making. Most pies you cook for 8-10 min at 425 degree then reduce temperature to 350 degrees for up to 40 minutes once again depending on the type of pie you are making. If your crust falls apart, try replacing the white sugar in the recipe for brown sugar. It will hold together better and never use warm bowls or material. Keep your mixing bowl cold, the flour and wet ingredient cold and use a cold rolling pin. Also do not over work the dough until you are ready to roll it out and prepare the pie. If necessary put the bowl and dough back into the fridge to keep every thing nice and cold.When doubling a pie recipe, how do I adjust the baking time?Set your timer as you are just baking one pie. Check when the timer rings to see if the crust is nicely browned and

1) if it's a fruit pie that the filling is bubbling

2) if it's a custard(pumpkin) type see if the filling has set up -test with a clean knife.



If the crust is getting too brown cover the edges with foil and you can always insert a knife in the filling to see if it's cooked through if you don't see the juice bubbling.
