How to adjust the thickness of ice for the commercial ice machine whirlpool model:GI1500XHB6?

I have a commercial ice machine whirlpool model:GI1500XHB6 but I couldn't find the thermostat to adjust the thickness.

There is a bin thermostat to shut off the compressor when the bin is full of ice. My question would be why do you need to adjust the ice thickness? Is the ice too thin? Too thick? There is an ice control thermistor (non-adjustable) that controls ice thickness. When thickness is achieved, the thermistor sends a signal to the P. C. board to release the ice onto the cutting grid. Have you cleaned the condenser?
